Whiskey Sour

Ingredients

50 ml Lambay Small Batch Blend
25 ml Lemon Juice
15 ml Simple Syrup*
10 ml Egg White
2 Dashes Angostura Bitters
Method

Bring the Lambay, Lemon Juice and Simple Syrup together in a cocktail shaker with ice and shake hard for about 10 seconds. Strain the cocktail into the second half of the shaker, disposing of the ice and add the egg whites before shaking again hard for another 10 seconds, this is called a dry shake that will prevent emulsion of the egg whites. Strain into a rocks glass, garnish with your two dashes of Angostura Bitters and if you’re feeling fancy, a slice of lemon. Now sit back with your favourite book and enjoy your homemade Lambay Whiskey Sour.

*How to make Simple Syrup:

Traditional simple syrup is made from one-part water to one part sugar (1:1). White granulated sugar is the standard sweetener, but once you’ve mastered that basic base, feel free to experiment with other sugars, keeping the ratio the same.

Steps

Add the sugar and water to a small saucepan over medium heat.

Stir until sugar is dissolved.

Strain into a jar and seal tightly with a lid.

Simple syrup will keep, refrigerated, for about one month.

Lambay Old-Fashioned

60ml Lambay Small Batch Blend
10ml Simple Syrup
1 Dash Orange Bitters

Method

You can make this classic cocktail the easily at home. Simply stir all ingredients together for 45 seconds over ice and strain into a rocks glass before garnishing with your choice (we recommend some mint to bring out some flavour). For those looking at a more sophisticated (or sweeter) version, forgo the simple syrup and use a sugar cube instead; place your sugar cube in your rocks glass and add a dash of bitters on top. Muddle until the sugar is dissolved and add your favourite Lambay Irish Whiskey and some ice, sit back with your favourite book and enjoy.

The Holy Trinity

40 ml Lambay Small Batch Blend
10 ml Aperol
10 ml Crème de Peche
30 ml Lemon
15 ml Simple Syrup
Top Soda Water

Simply add all the ingredients minus the soda water to a highball glass with ice and stir well for 30 seconds before topping with Soda Water. As the warmer weather comes in this certainly has a refreshing appeal, and you can easily multiply the ingredients to fill a jug and share with those close to you once the warmer weather sits in.

Lambay Cool Irish Coffee

50 ml Lambay Small Batch Blend
15 ml Amaro Montenegro
100 ml Cold Brew Coffee
25 ml Condensed milk

Method

Add all of the ingredients together into a cocktail shaker with ice and shake hard for 45 seconds, then strain into a rocks glass for a refreshing drink.

Cold Brew Coffee

Cold-brew is easy enough to make, simply combine your ground coffee and water and let it steep for 12 hours before straining.

Lambay AJ

60 ml Lambay Small Batch Blend
60 ml Grapefruit Juice
15 ml Simple Syrup
Garnish Cinnamon Powder

Method

Add the ingredients minus the cinnamon to a cocktail shaker with ice and shake hard for 30 seconds, before straining into a rocks glass with ice and garnish with a sprinkle of cinnamon powder, or some nutmeg if you want to add some extra spice.
